Tips For A Perfect & Light Tiramisu
High-Quality Mascarpone Cheese - Mascarpone is a key ingredient in tiramisu, providing its creamy and rich texture. Using high-quality mascarpone ensures a smooth and creamy consistency, enhancing the overall flavour of the dessert. Avoid using cheap store brands as they are too thin and will make your cream mixture too runny, not allowing it to set in the fridge properly.
Fresh Eggs - Tiramisu often involves raw eggs in the mascarpone mixture. In this recipe, we’ll be using a double-boiler, which essentially “cooks” your eggs, so in this case the eggs you use don’t matter too much. However, as tiramisu only uses a few ingredients, it is best to opt for the best quality ones to elevate it.
Good Quality Coffee - The ladyfingers are soaked in coffee, so using a high-quality espresso or strong coffee is crucial for a strong and authentic flavour. Avoid using instant coffee for the best results. This recipe uses espresso powder to make this accessible but feel free to use strong brewed coffee.
Layering - Evenly distribute the mascarpone mixture and ensure the ladyfingers are properly soaked but not overly soggy. This will not only make your tiramisu more visually appealing but will also allow you to have a bite of everything.
Chilling Before Serving - Tiramisu benefits from chilling in the refrigerator for several hours but is best kept overnight. This allows the flavours to soak, and the dessert to set. Note that tiramisu is also best enjoyed when served chilled.
Notes
Coffee/Espresso Powder - This recipe uses espresso powder to make this accessible but feel free to use strong brewed coffee. (Using a high-quality espresso or strong coffee is crucial for a strong and authentic flavour. Avoid using instant coffee for the best results.)
Eggs - In this recipe, we'll use a double-boiler which will “cook” the eggs, so the type of eggs you use here isn't as crucial. However, since tiramisu has minimal ingredients, it's recommended to choose high-quality ones for the best results.
Mascarpone Cheese - I use Galbani Mascarpone in this recipe. Avoid using cheap store brands as they are too thin and will make your cream mixture too runny, not allowing it to set in the fridge properly.
Ladyfinger Biscuits - Also known as "savoiardi" in Italian or "sponge fingers." Use good quality ladyfingers for the best results. I use a 200g pack of Forno Bonomi Savoiardi ladyfingers in this recipe. If you’re using ladyfingers smaller in size you will need more than 18 (around 25-30).
Chocolate Shavings - Make your own chocolate shavings by grating or finely chopping up good-quality chocolate. Store-bought chocolate curls just don’t taste the same!

3/4 Cup (120ml) Boiling Water

18 Large Ladyfinger biscuits *
