Madeira Loaf Cake

  • 230g Plain Flour

  • 2 Tsp Baking Powder

  • 1/2 Tsp Salt

  • 120g Melted Butter

  • 100g White Sugar

  • 50g Light Brown Sugar

  • 55g Vegetable Oil

  • 2 Large Eggs

  • 2 Tsp Vanilla Extract

  • 150ml Whole Milk

  • Bread Knife / Sharp Knife


Instructions

Madeira Loaf Cake

Preheat your oven to 180°C (gas mark 3), whilst you make your batter.

Grease a loaf tin with butter and set aside.

In a large mixing bowl combine 120g melted butter, 100g white sugar and 50g light brown sugar.

Whisk on medium-high for about 2 minutes, till light and fluffy.

Add 55g vegetable oil, 2 large eggs and 2 Tsp vanilla extract.

Whisk till well combined.

In another bowl combine 230g plain flour, 2 Tsp baking powder and 1/2 Tsp salt. Whisk till combined.

Sift your dry ingredients into your wet mixture.

Add 150ml milk to your mixture.

Fold in both the milk and dry ingredients using a rubber spatula. 

Pour your batter into your greased loaf tin. Bake on the bottom rack for 42-45 minutes. Insert a toothpick/small knife into the centre of your cake to check it’s fully baked - the toothpick should come out clean, meaning it’s done! 

Let your cake cool in the pan for at least 15 minutes before removing and cutting into 8 slices. Cutting into your cake while it’s still hot can cause your cake to crumble and lose its shape. 

I like to have mine hot, paired with homemade custard and fresh sweet strawberries!
