Ingredients

Cheese and Onion Twists

Pastry and Filling

  • 1 Ready Rolled Puff Pastry

  • 2 Gouda Cheese Slices

  • 2 Red Leicester Cheese Slices

  • 2 Tbsp Cream Cheese

  • 1/2 a Shallot, thinly sliced

  • Some Jalapeño, roughly chopped (optional)

Egg Wash

Feel free to switch up the ingredients–this is what I found to give the most flavour!

  • 1 Large Egg

  • 1 Tbsp Butter, melted

  • 1 Clove of Garlic, grated

  • 2 Red Chillies, thinly slices

  • Some Fresh Parsley, Chives, Rosemary and Thyme, finely chopped

  • 1/2 Tsp Dark Soy Sauce

  • 1 Tsp Honey

  • 1/4 Tsp Smoked Paprika

  • 1/4 Tsp Cayenne Pepper

  • Salt + Ground Black Pepper, to taste

Instructions

  1. Preheat your oven to 200°C (Gas Mark 6) for 10 minutes while you prepare the ingredients.

  2. Let the ready rolled puff pastry sit out for about 5 minutes to soften. Make your egg wash in the mean time.

  3. For the egg wash, whisk all the ingredients together and set aside.

  4. Roll out the puff pastry and spread 2 Tbsp of cream cheese on one half. Add slices of Gouda, Red Leicester cheese, thinly sliced shallots, and jalapeño on top.

  5. Fold the empty half of the pastry over using the baking paper provided, and press gently to seal.

  6. Be sure to cut starting from the folded edge down and cut the pastry into 8 even slices, starting by cutting it in half, then into quarters, and finally into eighths.

  7. If you’re keen on presentation, I would recommend placing your cut pastries in the fridge for 5 minutes to help hold its shape when twisting.

  8. When you're ready, twist each piece by holding both ends and gently turning them in opposite directions. Then place them on the baking paper on a flat baking tray.

  9. Brush the egg wash evenly over the pastries using a pastry brush.

  10. Bake in the oven for 10-15 minutes, until golden and crispy. Cooking times may vary depending on your oven. Once baked, they’re ready to be served fresh and hot!

Store leftovers in an airtight container in the fridge for up to 5 days or in the freezer for up to a month.
